Gluten Free Brownies
- Preheat the oven to 350 degrees
- Add 1 cup worth of the chocolate chips to a microwave safe bowl and microwave at 30-45 second intervals, stirring between each until completely melted.
- Meanwhile, whisk together the eggs, sugar, vanilla, milk and oil. Whisk in the melted chocolate
- Add in the dry ingredients (flour, cocoa, salt and baking powder) and mix until a batter forms. Fold in the remaining 2/3 cup of chocolate chip.
- Transfer to an 9x9 baking dish lined with parchment paper and spread the batter evenly.
- Bake for 30-35 minutes or until a toothpick comes out somewhat clean and the tops are nice and shiny/crinkly. Do the toothpick test to make sure everything is completely done.
- Let cool completely.

Strawberry Glaze
- Heat a saucepan to medium, add in strawberries, sugar, cornstarch, water and lemon juice.
- Cook for 10-15 minutes (Cook longer for thicker consistency).
- Set aside to cool for 15 minutes.
- After cooling layer and spread evenly across brownies.
- Add a even layer of the slice strawberries on top.
- Cover with plastic wrap and place in the freezer for an hour.
- After an hour has passed, take brownie and strawberry mixture out of the freezer.
- Slice with a knife or bench scraper 1” by 1” bite size pieces.

Chocolate Shell
- Place chocolate in a microwave safe bowl and heat for 30 second intervals until melted.
- Blend the freeze dried strawberries in a food processor until it turns into a dusty sand texture.
- Take a brownie bite and dip into chocolate until coated evenly. (You can use a toothpick to dip so there is less mess)
- Sprinkle the freeze dried strawberry dust and flaky sea salt on top.
Note
For best results, allow the brownies to cool completely before layering the strawberry glaze.
To achieve a perfectly smooth chocolate shell, ensure the chocolate is fully melted and at a pourable consistency before dipping the brownie bites.
