Blondie Base
- Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a medium mixing bowl, whisk together 3 cups (360 g) gluten-free 1:1 baking flour, 2 teaspoons baking powder, and 1 teaspoon salt.
- In a separate large bowl, whisk 3 cups (600 g) packed light or medium brown sugar with 24 tablespoons (340 g) salted melted butter until smooth and combined.
- Whisk in 4 large eggs, one at a time, followed by 2 tablespoons vanilla extract.
- Fold the dry ingredients into the wet mixture until just combined.
- Spread the batter evenly into the prepared pan.

Apple Topping
- In a large bowl, toss 2 large Honeycrisp apples and 1 sweet apple (both peeled and thinly sliced to ¼ inch) with 1 tablespoon melted butter, 2 tablespoons gluten-free 1:1 flour, 2 tablespoons brown sugar, 1 teaspoon cinnamon, and ¼ teaspoon nutmeg.
- Arrange the coated apple slices evenly over the blondie batter.

Pecan Streusel
- In a medium bowl, combine ¾ cup (90 g) gluten-free 1:1 flour, ¼ cup (50 g) packed brown sugar, ½ cup gluten-free quick oats, and ¼ teaspoon cinnamon.
- Add ½ cup (113 g) chilled, cubed butter.
- Cut the butter into the mixture using a pastry cutter or fork until it resembles coarse crumbs.
- Stir in ½ cup chopped pecans.
- Sprinkle evenly over the apple layer.

- Bake for 45–50 minutes, or until the blondies are set in the center and the streusel topping is golden brown.
- Cool completely in the pan on a wire rack before slicing.
- Drizzle the cooled blondies generously with ½ recipe of homemade or store-bought gluten-free caramel sauce before slicing and serving.
