Preparation

  1. Gluten Free Brownies

    1. Preheat the oven to 350 degrees  
    2. Add 1 cup worth of the chocolate chips to a microwave safe bowl and microwave at 30-45 second intervals, stirring between each until completely melted.
    3. Meanwhile, whisk together the eggs, sugar, vanilla, milk and oil. Whisk in the melted chocolate
    4. Add in the dry ingredients (flour, cocoa, salt and baking powder) and mix until a batter forms. Fold in the remaining 2/3 cup of chocolate chip.
    5. Transfer to an 9x9 baking dish lined with parchment paper and spread the batter evenly.
    6. Bake for 30-35 minutes or until a toothpick comes out somewhat clean and the tops are nice and shiny/crinkly. Do the toothpick test to make sure everything is completely done.
    7. Let cool completely.
  2. Strawberry Glaze

    1. Heat a saucepan to medium, add in strawberries, sugar, cornstarch, water and lemon juice.
    2. Cook for 10-15 minutes (Cook longer for thicker consistency).
    3. Set aside to cool for 15 minutes.
    4. After cooling layer and spread evenly across brownies.
    5. Add a even layer of the slice strawberries on top.
    6. Cover with plastic wrap and place in the freezer for an hour.
    7. After an hour has passed, take brownie and strawberry mixture out of the freezer.
    8. Slice with a knife or bench scraper 1” by 1” bite size pieces.
  3. Chocolate Shell

    1. Place chocolate in a microwave safe bowl and heat for 30 second intervals until melted.
    2. Blend the freeze dried strawberries in a food processor until it turns into a dusty sand texture.
    3. Take a brownie bite and dip into chocolate until coated evenly. (You can use a toothpick to dip so there is less mess)
    4. Sprinkle the freeze dried strawberry dust and flaky sea salt on top.

Note

For best results, allow the brownies to cool completely before layering the strawberry glaze.
To achieve a perfectly smooth chocolate shell, ensure the chocolate is fully melted and at a pourable consistency before dipping the brownie bites.
